Flatiron Café & Bar to Open in Former Schuby’s Location on State Street

LA CROSSE, Wis. — Flatiron Café La Crosse will open this spring in the former Schuby’s location at 321 State St. in downtown La Crosse.

The new restaurant will offer casual dining with elevated counter service. Owners plan to serve lunch and dinner with a menu built around European comfort food and regional ingredients.

“Our mission is to bring well-executed comfort food with warm and helpful hospitality to our guests,” the restaurant shared in a social media announcement.

Flatiron Café & Bar will emphasize ingredients sourced from local farms. La Crosse area restaurants increasingly partner with producers such as Pasture Pride Cheese in Cashton and St. Brigid’s Meadow in Coon Valley, both known for high-quality. Local growers also supply seasonal produce to kitchens throughout La Crosse, strengthening ties between downtown restaurants and the region’s agricultural community.

By highlighting those ingredients, Flatiron Cafe La Crosse joins a broader movement among area chefs who prioritize transparency and freshness. Using locally raised meats, dairy products and produce allows restaurants to support regional agriculture while delivering quality food to customers.

The restaurant takes over a location well known to many downtown diners. Schuby’s previously operated in the State Street space and built a loyal following. When asked online whether the Nashville hot chicken sandwich — a favorite tied to a former Schuby’s chef — could return, the restaurant responded, “very high possibility.”

Owners hope to open in mid-April, depending on construction progress. They plan to share updates and menu previews on Facebook and Instagram in the coming weeks.
