LA CROSSE, Wis. — Hollandberry Pannekoeken continues work on its first Wisconsin location at the former Wells Fargo drive-through building in downtown La Crosse.
According to a social media update shared one week ago, construction has moved forward at a steady pace. Crews are remodeling the space to prepare it for a full-service restaurant. As a result, the building is starting to take shape.
Hollandberry Pannekoeken has served customers in downtown Rochester, Minnesota, since 1986. Over the years, the restaurant has become known for its oven-baked Dutch pannekoeken. These soufflé-style pancakes feature a range of sweet and savory toppings.
In addition to pannekoeken, the menu includes classic breakfast items, omelets, sandwiches, burgers, salads, and specialty coffee drinks. The restaurant also bakes more than 20 varieties of muffins in-house.
Meanwhile, the La Crosse restaurant will become Hollandberry’s second location and its first in Wisconsin. The company has not yet shared an opening date.
However, the larger former bank building on the property remains unused. Because of this, the owners have asked the public to share ideas for the space. Some suggestions include a small farmers market or a speakeasy-style lounge.
To encourage ideas, Hollandberry shared a walkthrough of the property on its Instagram page. The owners said they plan to review suggestions as construction continues. Ultimately, the project aims to add new energy to downtown La Crosse.
